Smelt look more like bait than appetizers. But don’t count these tiny dancers out, especially not at the Red Stag, where they’re breaded, fried and served with sweet onion tartar sauce and smoked tomato ketchup. Oh, and because smelt are seriously underfished (according to seafood watchdog groups), you can eat them by the handful without feeling guilty.
