Three courses, $30–40/person @ Heartland: A recent “fauna” menu (that would be the meat-eater’s menu) at Heartland—the place in the Twin Cities to dine on haute Midwestern fare—featured duck consommé, a cassoulet of wild boar, veal, pork, sausage and white beans, and a dark chocolate mousse.
